This weekend, I hardly did anything productive relating to school. After being away from home for almost a month, I wanted to enjoy it – and the simplicity it brings. Staying in bed with a cup of tea and my laptop. Using my (dusted) kitchen appliances/cookware. Watching Nia have fun with all of her toys that have been silently saying, play with me! You know, those kind of things.
And, you might have noticed how I’m playing around with my header again. I can’t guarantee that the above product is the one you’ll be seeing for sometime now, but let’s bank on it staying for at least a week.
So, back to me doing nothing. I have to let you in on some of my eats because I outdid myself this weekend. Feels good to be back in my own kitchen, eating (and drinking) good stuff, which lead to a binge of cooking and baking activity. After having such a jam-packed semester in the fall and not being able to cook/bake much, and then being away on holiday, I thought it would take more time to get back into the kitchen routine. Luckily, not. And I have a great new vegan cookbook that I might have to rename “the vegan bible” because it is the shiz. I made 4 recipes from it within 2 days. If that ain’t proof of how awesome it is, then call me crazy!
Looking at my eats, first up on Friday night, I made a tofu, rice and kale dish (from the book, obvs) in a spicy peanut sauce.
You could marry the peanut sauce. Or lick it. Or lick it and marry it. I’m no judge.
Then the following morning, I made some new pancakes (which was a big step because I’m so used to making my own recipe).
They were very pillowy and they stuffed me to the brim like no other! Nia enjoyed them too.
But why stop at pancakes when you can top it off with a green smoothie? (Clearly my stomach has no boundaries. Or Nia’s.)
Nia might have missed the vitamix as much as me, but she definitely didn’t miss the noise of it. That thing gets loud when it’s chopping and blending. Luckily, a tasty green smoothie made it up to her.
Seeing as I stuffed her also, she had to walk some of it off. (Me? No, I just sat there on the couch.)

And then I enjoyed watching her play with her things. I think she might have forgotten what it’s like to play with real toys. She had somewhat of a drink coaster obsession down in Florida. What parent lets their poor child get enjoyment out of coasters?! Oh, this one here! I’m just glad she’s home to do more of this now!
And read her books. Plenty of books.
Now I’m going to reveal a big fact about me that might catch you off guard: I really love scones.
So, I searched the web for a pumpkin scone recipe (because of a lingering can of pumpkin purée in my cupboard and on the husband’s request), found a drool-worthy one, and made it yesterday afternoon.
Drooling not necessary if you keep shoving these in your mouth though (which I did).
I could have ate the whole tray of 8, but I stopped after 2 (to keep whatever dignity I have left).
And finally, I made a curried tofu stew from the vegan bible last night. Sadly, unpictured. But I made enough to feed a small village (that’s what doubling the recipe does for ya). Oh, and a red lentil soup for lunch. Like I said, I was just hitting my stride in the kitchen.
And, you won’t believe it, but I’m actually planning ahead for meals this week. Take a look.
Monday: red-hot BLTs
Tuesday: hubby’s dinner making night!!! (<—this is going to be a NEW weekly thing; hold him to it!)
Wednesday: lentil sloppy joes
Thursday: something with beans + roasted veggies (like rutabagas)
Friday: takeout (??)
At least we tentatively have a plan (not all are set in stone), because I really do like the idea of making this a weekly occurrence again.
And finally (run-on blog post of the year, I know), although I made it sound like I didn’t do anything this weekend, I lied. I’m sorry. I’m bad at this kind of thing. We had a quick visit to my grandparents’ house on Friday, and I just have to show you this picture of Nia with my grandparents.
I love all three of them.
And then on Saturday night, we actually took Nia to her first basketball game (the local pro team that Tyler’s work owns), which also happened to be my first time going to see them play, too.
She did not know what to think at first, but then she was loving the stimulation.
I’m ready for week 2 of school, especially now that I have meal plans, left overs, and had a weekend to relax.

I watched some and I thought everyone looked so good…and young! I especially loved Kate Beckinsale in her dress. I don’t know why, I just thought she looked amazing!
