4-ingredient red lentil soup

I'm a BIG "soupie" (<--it's a cross between a soup addict and foodie, and is totally the word for 2016 ;), so why not start the new year off with a delicious and simple recipe. I've given you plenty so far, but can I promise you something? This one is by far the easiest and it is super flavourful. A winning combo in my books. I make this soup all the time and it never disappoints.

I kind of mentioned on Instagram that I would post a different soup recipe, but can we make a deal that it's coming soon? I thought this one was a better fit as we ease back into life following the holidays because it's as simple as it gets. The basic version only requires four ingredients, but you wouldn't know it contained so little because the flavours don't lie.

I've included the four-ingredient version that you can pretty much make with your eyes closed, as well as, a variation to it below. Enjoy, and let me know if you make it. Tag me in your instagram pictures (@glowwithchar) or use the #glowwithchar hashtag.

4 INGREDIENT RED LENTIL SOUP

Makes: ~6-7 cups // Serves: 2-4

Ingredients:

  • 2 large carrots, diced
  • 1 large onion, diced
  • 1.5 cups red lentils, rinsed
  • 6 cups veggie broth (I use homemade)
  • optional: some salt + more veggies

Directions:

  1. Bring all ingredients to a boil in a medium to large saucepan, then cover.
  2. Simmer on med-low heat for 25-30 minutes.
  3. Add some greens once cooked to wilt in soup.

IT'S THAT SIMPLE! I PROMISE! And like I said, you are NOT compromising on flavour. Red lentils add a tremendous amount of flavour to any meal...including this soup.
