I think the wheels are starting to squeak a little less as I get back into blogging! It’s only been 8 days since the last post – better than the months of silence that existed before 😉
I thought I would get one post in before I head off to Salt Lake City, Utah tomorrow. That’s right – I’m venturing west! I’m super excited for this big adventure tomorrow because of a few reasons:
a) I’m getting out on my own – Nia will be in good hands with aunties, grandma & cousins
b) this is some much needed development time for me + my biz
c) I’ve never been to Utah before!
I’m heading to Utah for doTERRA’s annual convention This year’s is going to be amazing & I cannot wait to learn what the 23 new essential oil products are going to be – STAY TUNED!
I know I haven’t chatted a whole lot about anything on the blog in a while but just a heads up that essential oils will be a BIG part of that moving forward because they are the key tool I use to help empower others, especially women/mamas because taking ownership of your health is so, so key & oils can literally help in all areas of your life! So this is now my pride & passion ever since I started using them back at the beginning of the year. And I’m kinda like a train going full speed… #cantstopwontstop.
I will be taking lots of pictures while I’m away & look for some snapchat adventures [charmcghie on snapchat] or on the new IG story [@essentialglow on IG] – still not sure which one I like better…thoughts?
I really am pumped to get out to a whole new place of North America that I’ve never visited before & connecting with a ton of like-minded peeps is so key. But have I packed my bag yet? Clearly a huge no. Do I know what oils are A MUST for traveling with? Besides saying ‘all,’ I’m really screwed because I literally don’t know which ones to bring & which ones to leave behind. I will keep you updated on how that goes. The afternoon will be full of last minute stops, batch cooking [maybe] & an extra big snuggle with Nia tonight.
But enough about that, I wanted to show you my food haul I picked up yesterday – because grocery shopping right before a trip makes ALL the sense. I mainly wanted to make sure Nia had adequate amounts of food in case she shoots up five feet soon.
Here’s what I got:
To make/use [with this stuff + extra stuff I still had at home]:
- rainbow power bowls [an original recipe of mine that I really need to post here soon]
- homemade vegan mac ‘n’ cheese
- frozen pizza for Friday night meal option for Nia & my mom!
- tofu scramble – minus the tofu I forgot to pick up [son of a…] + home fries
- frozen pad thai as back up
- kale caesar salad
- butternut squash soup
- bread for either grilled cheese or breakfast
- snacks to sustain Nia [haha]
- kombucha [for Nia to enjoy one of the days I’m gone]
- + all the randomness in between
I feel like this is a good start for me to sloooooowly transition back into meal planning. If you check out some old blog posts on here, I’m sorry, but I used to KILL. IT. I’m returning to that girl – promise + make me do it 😉
